Break the Rules with This Chicken Chili Recipe. Bonus: It takes less than 25 minutes!

Ingredients:

  • 1-2 pounds ground chicken 

  • 1/2 carton of chicken stock

  • 1/2 carton of tomato soup

  • 1/2 of an onion

  • 1 1/2 peppers (I used 1/2's of three different types: red, yellow and orange)

  • 1/2 tomato

  • 2 cans of black beans (you can use any beans)

  • 1 can of corn 

  • 1 tablespoon of garlic

  • 4 teaspoons of chili powder (potentially more based on spice preference)

  • 1 teaspoon of paprika

  • 1 teaspoon of basil

  • 2 teaspoons of garlic salt

  • 2 teaspoons of salt (or to taste)

  • black pepper to taste

  • Pam or Olive Oil

  • *Serving Size: 4

Recipe:

  • Bring pot to high heat and spray the bottom with pam or olive oil. Add garlic and onions and saute for about 3-5 minutes. Season with salt and pepper. 

  • Season chicken with a teaspoon of garlic salt and chilli powder Add chicken meat and mix until chicken is mostly cooked through. Break apart pieces of chicken as you are mixing so it looks like taco meat. 

  • Then add chicken stock and tomato soup. Once the broth is boiling, add tomatoes and peppers. Stir on high for 5 minutes. 

  • Add remaining spices: 2-3 teaspoons of chilli powder, 1 teaspoon of paprika, 1 teaspoon of garlic salt and basil. Add pepper to taste.

  • Add beans and corn and then let cook for 7-10 minutes.

  • Taste and enjoy! You may need to add more spices based on preference.

There are no rules when it comes to Chili! I read over 10 different recipes and combined them based on what I had in my fridge and pantry. The below is a little guide with some items and a made up recipe that works, but basically, whatever you mix into your pot will be delicious!
