How to Make Fajitas Just Like Your Favorite Mexican Restaurant

Ingredients:

1 Red pepper
1 Yellow pepper
1 Orange pepper
1 Yellow onion
1 Package of mushrooms
2 Pounds of thinly sliced chicken 
1 Packet of Old Paso Fajita Seasoning mix 

1/2 Cup of water
1 Can of black beans
1 Box of white rice
Guacamole (2 avocados, half of a tomato, 1 onion and Lime juice)
Cheddar/mozzarella cheese
Salsa (in a jar)
Tortilla

*Serving Size: 4

Veggies:

Thinly slice peppers, onions and mushrooms. Spray Pam or olive oil in pan. Sauté for approximately 10 minutes.

​

Chicken:

Slice chicken into thin pieces. Spray Pam or olive oil in separate pan. Add chicken and cook for 10-15 minutes (or until fully cooked and tender). After 10 minutes add in fajita mix + a half cup of water. Let simmer for 2-3 minutes. Add veggies to the chicken dish. Stir all together.

Sides:
Guacamole: Add two avocados, half of the tomato and half of the onion to a bowl. Mash and then add 4 squirts of lime juice. Mix and salt as needed.

​

Rice & Beans: Follow instructions on rice box and then once fully cooked, pour in the beans (do not drain bean juice. It will give the rice a nice flavor). Salt as needed.

​

Cheese: If you do not have already shredded cheese, slice/chop thinly and then put in small bowl to serve.

​

Salsa: Put in small bowl to serve
 

Tortillas: Heat up in microwave for 25 seconds (place paper towel on top while in the microwave so they don't get soggy).

​

Once everything is ready, you can put all of the ingredients in a tortilla or make a little fajita bowl on your plate.
